Ingredients:
- 2 cups cooked turkey, diced
- 2 cups diced potatoes (or frozen hashbrowns)
- ½ cup That Pickle Guy Chunky Giardiniera (hot or mild), strained
- ½ cup diced onions
- ½ cup diced bell peppers
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- ½ tsp black pepper
- 2 tbsp olive oil
- 2 eggs (optional, for serving)
Instructions:
- Heat olive oil in a skillet over medium heat. Add onions, bell peppers, and garlic; sauté until soft.
- Add diced potatoes and cook until crispy, about 8–10 minutes.
- Stir in turkey, TPG Chunky Giardiniera, paprika, and black pepper. Cook until heated through.
- Serve as is, or top with a fried or poached egg.
