Each production process and every vegetable lot is carefully documented, guaranteeing consistency in quality across all batches.
We have secured long-term partnerships with family-owned farms that employ sustainable growing practices. These farms allow each vegetable to ripen fully before harvest, ensuring that our ingredients reach optimal flavor, texture, and nutrient richness. Unlike bulk-sourced or market-bought vegetables, our produce is never harvested prematurely. After being picked each vegetable lot is hydro-cooled and transported in refrigerated trucks to lock in peak freshness and quality until it reaches our facility.
Upon arrival, each vegetable lot is put through a stringent “Survival of the Fittest” inspection, where only the best vegetables are selected for processing. The chosen vegetables then undergo a cold filtration process to ensure purity and cleanliness without compromising their natural structure or flavors.
To maintain the authentic taste and texture of each vegetable, our curing process keeps them raw, with no heating or cooking involved. Each vegetable is cured in refrigerated crocks, allowing it to retain its natural characteristics. This method also ensures that our products meet the needs of raw food diets or recipes that call for uncooked vegetables.
Each vegetable group is cured individually—green peppers with green peppers, carrots with carrots, etc. This process prevents flavor blending and ensures that each vegetables retains its unique profile. Our individual crocking method is essential for achieving the distinct, balanced flavor that defines our products.
After curing, vegetables are drained, rinsed, and combined into small batches. This careful blending process allows for a consistent balance of vegetables within each batch, resulting in a medley of flavors that is identical across production runs. Each batch yields about 50 cases, ensuring close attention to quality and flavor and consistency in every jar.
Every jar is crafted by our skilled team, who uphold our small-batch, handcrafted tradition even as we integrate modern technology to enhance efficiency. This approach allows us to maintain our high standards for quality, flavor, and consistency while ensuring each jar receives the close attention it deserves.
Our products are naturally cured through pickling, which makes them shelf-stable whether opened or unopened. Since they’re not heat-treated or vacuum-sealed, our lids won’t “pop” upon opening. Each jar includes a “best by” date to guide optimal use, though this date is not an expiration.
Our products are made with non-GMO ingredients that are free from preservatives, artificial ingredients, MSG, trans fat, and gluten. They are Kosher Pareve-certified by the Chicago Rabbinical Council and are suitable for vegan and vegetarian diets.
