Pickle and Bacon Potato Salad

Ingredients:

  • 3 cups boiled potatoes, cubed
  • 1/2 cup TPG Dill Chips, chopped
  • 1/4 cup cooked bacon, crumbled
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine boiled potatoes, chopped pickles, and crumbled bacon.
  2. In a small bowl, whisk together mayo, Dijon mustard, and parsley.
  3. Pour the dressing over the potato mixture and toss to coat.
  4. Season with salt and pepper.
  5. Chill for 1 hour before serving.
