Giardiniera and Sausage Frittata

Ingredients:

  • 6 large eggs
  • 1/4 cup TPG Chunky Giardiniera, strained
  • 1/2 cup cooked sausage, crumbled
  • 1/4 cup shredded mozzarella cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F.
  2. In a skillet, heat olive oil over medium heat and cook the crumbled sausage.
  3. Whisk the eggs with salt, pepper, and TPG Chunky Giardiniera.
  4. Pour the egg mixture into the skillet and cook until the edges set, about 5 minutes.
  5. Sprinkle with mozzarella cheese and transfer to the oven.
  6. Bake for 10-12 minutes or until fully set.
  7. Serve warm.
