Breakfast Tacos

Ingredients:

  • 4 small flour or corn tortillas
  • 4 eggs, scrambled
  • ½ cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • ¼ cup That Pickle Guy Giardiniera or Olive Muffalata, strained
  • ½ cup cooked breakfast sausage or crispy bacon, crumbled
  • ¼ cup diced bell peppers
  • ¼ cup diced onions
  • ¼ cup diced tomatoes
  • ¼ cup chopped cilantro (optional)
  • 1 tbsp butter or oil for cooking
  • Hot sauce (optional)

Instructions:

  1. Heat butter or oil in a skillet over medium heat. Add onions and bell peppers, sauté for 2 minutes.
  2. Add scrambled eggs and cook until set, stirring occasionally.
  3. Stir in TPG product of choice and remove from heat.
  4. Warm tortillas and fill with eggs, sausage/bacon, cheese, and tomatoes.
  5. Top with cilantro and hot sauce, if desired. Serve warm
