Ingredients:
- 6 large eggs
- 1/4 cup TPG Chunky Giardiniera, strained
- 1/2 cup cooked sausage, crumbled
- 1/4 cup shredded mozzarella cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F.
- In a skillet, heat olive oil over medium heat and cook the crumbled sausage.
- Whisk the eggs with salt, pepper, and TPG Chunky Giardiniera.
- Pour the egg mixture into the skillet and cook until the edges set, about 5 minutes.
- Sprinkle with mozzarella cheese and transfer to the oven.
- Bake for 10-12 minutes or until fully set.
- Serve warm.
